Marinated raw fish salad


This is one of the tastiest ways you can enjoy fresh fish.  The fish is not cooked with heat but in lemon juice which reacts with the raw fish making it appear to be cooked.


Ingredients
500g Trevally or any fresh, boneless & skinless white fish
3 - 4 large, freshly squeezed lemons
¼ fresh pineapple cut into pieces
½ red onion diced
½ red, green or yellow capsicum diced
1 small, red chilli diced
2 spring onions, thinly sliced
½ cup coconut cream

Directions
Dice fish into 1 - 2cm cubes, place in noncorrosive bowl and mix with lemon juice. 
Cover and marinate in fridge for up to one hour.
While the fish is marinating, prep the remaining ingredients.
When ready to serve, mix fish mixture with fresh ingredients and coconut cream to taste.
Season with salt and pepper.

Serve in small bowls as a refreshing starter or light meal, enjoy!
